  • 13 cup all-purpose flour
  • 14 teaspoon pepper
  • 1 egg
  • 2 tablespoons water
  • 23 cup crushed corn flakes
  • 1 tablespoon grated parmesan cheese
  • 18 teaspoon cayenne pepper
  • 1 lb haddock fillets or 1 lb the fish, of choice

  • Preheat oven to 425°F.
  • Combine flour and pepper in a shallow bowl.
  • In a second bowl, combine egg and water.
  • In a third bowl, combine corn flakes, cheese and cayenne.
  • Dredge fish in flour mixture, then egg mixture and coat with corn flakes.
  • Place fish fillets on a baking sheet that has been coated with a nonstick cooking spray.
  • Bake at 425°F for 10-15 minutes, or until fish flakes easily with a fork.

  1. This is a great recipe. It's easy, fast, and tastes great. I made this using Talapia and cornflour in place of flour. I also added some garlic powder to the cornflake/parmesan cheese mix. I'll definitely make these again.

  2. This was very good. My husband even ate it cold! The cornflakes keep it nice and crispy. I, too, used tilapia, and it turned out great. Insteand of cayenne I used paprika. Not being sure of the amount of spice involved, I didn't add any extra, but next time I will, as I feel it needs a little extra kick. Does not reheat well in the microwave, but very few fish do. Thanks for a great recipe that I will definitely make again!

  3. This recipe turned out great. I did not add the parmesan cheese to the coating, but I will next time. I used halibut which was pretty thick, so I lowered the oven temp. to 400 degrees after it started become crispy. Very good and I'll make it again. Thanks so much.

  5. This dish really delivers on yummy meal especially when considering how little time it takes to prepare. I love that everything you need, maybe except the fish, is likely something I'll have on hand. Looks like a lot of people took out the cayenne pepper, but I really liked it. It adds just a little flavor without much spice, if any, so don't be afraid of that. I'll definitely make this again.

  4. Delicious crispy fish. Instead of the cornflakes (which I didn't have) I used corn chex and really liked the result. For the fish I used catfish which was fairly thick cooking it about 20 minutes (turning it half way through) instead of the time indicated. Thanks for sharing this keeper.

I spend most of my free time in the kitchen, either checking out Recipezaar or experimenting with a newly found recipe. <br /><br />My DH and I are both from Texas and we both come from Italian families. Anyone who stops by my house should be prepared to eat!!! I'm always forcing friends and family to try whatever it is that just came out of the oven. I know that is a horrible habit but I can't break it... I think it must be the Italian in me! LOL :) <br /><br />My sister (<a href=http://www.recipezaar.com/browse/getchef.zsp?id=85654>Cookin_Kit</a>) and I used to help my Mom (<a href=http://www.recipezaar.com/browse/getchef.zsp?id=124343>JudaThann</a>) in the kitchen a lot growing up. He doesn't cook as often as he did when we first got married, but he makes an awesome pizza and still makes them at least twice a month. He keeps his recipes for the dough and the sauce top secret, even from me. LOL <br /><br />I have two step-children. The oldest graduated from college and the youngest is a sophom*ore at Texas Tech. I also have two cats and a dog.
