Gault&Millau's review

The best table in Fontainebleau is also one of the most interesting in the region outside Paris. Kunihisa Goto is both a master of his art and capable today of finding and using the rarest products that his clientele demand. His very prestigious formula with caviar, langoustine, sweetbreads and wagyu has many fans. His most affordable menu, at €90 for 4 courses (extendable to €165 for 6), remains an excellent bargain in this pretty, intimate setting that's also a chic haven of relaxation for Bellifontains: line-caught mackerel in a lemongrass broth and mini-vegetables by Éric Roy, roasted veal filet artichoke with honey vinegar and barigoule sauce, 18-month comté granny fuji and golden apples with a cider vinegar reduction, cherry and milk foam sorbet with mint and sudachi. A very good, smiling and well-trained front-of-house team, from a restaurant that deserves to regain its 3 toques.
