I recently got an email from a reader requesting keto soups. She said she had been doing so well through summer on her low-carb diet because they stuck to lots of grilled meals, but she was struggling because she wanted winter comfort food. Believe me, I understand. I have always loved soup and so many of my favorite soups contain pasta, beans, or rice. It can be tricky to imagine how to create a filling soup without those!

Ingredients for Pizza Soup

This Instant Pot Pizza Soup is loaded with good stuff! I really wanted to keep the flavor profile as close to a loaded or supreme pizza as I could while still keeping it low-carb.

The ingredients in this keto pizza soup recipe are:

  • Italian Sausage
  • Bell Pepper
  • Mushrooms
  • Spinach
  • Zucchini
  • Diced Tomatoes
  • Tomato Paste
  • Beef Broth
  • Heavy Cream
  • Cream Cheese

How to Make Keto Pizza Soup

You may be wondering how it is possible to have a “tomato-based” soup that is low-carb. I’ve done a lot of experimenting and I use a combination of tomato paste and beef broth to create a rich tomato-based broth that adds tons of flavor without the carbs.

Here’s how the pizza soup is made:

  1. Turn the Instant Pot to sauté mode, spray the bottom of the pan, and cook the meat.
  2. Turn the Instant Pot off and add the mushrooms, garlic, zucchini, spinach, bell pepper, spices, tomatoes, tomato paste and beef broth.
  3. Put the lid on, turn the valve to sealing, and select Manual or Pressure Cook for 15 minutes. (It will take about 15 minutes to come to pressure and begin counting down.)
  4. Once the cook time is over, let the pressure manually release for 5-10 minutes, then manually release the remaining pressure.
  5. Stir in cream cheese and heavy cream.
  6. Serve with shredded mozzarella or parmesan.

Is Pizza Soup a Good Keto Meal Prep Recipe?

If you plan on making this soup for lunch, it will stay fresh in the fridge for up to four days. If you wanted to make this soup to freeze, I would recommend doing so without the dairy. The cream cheese, heavy cream and shredded cheese will not freeze well, so make this soup omitting those ingredients. Write on a freezer bag what dairy needs to be added and the amounts and pour the soup that you’ve made into the bag and freeze. That way, when you are ready to prepare the soup, you know exactly what you’ll need! This soup will stay good in the fridge for up to three months.

How to Store Pizza Soup

To store this keto soup, place in a plastic or glass container with an airtight lid and put in the fridge. To warm, either warm on the stovetop or in the microwave in 30 second increments. This soup will stay fresh in the fridge for up to four days.

  • 1 pound Italian Sausage
  • 1 pound of ground beef
  • 8 ounces chopped mushrooms
  • 2 teaspoons garlic
  • 1 cup chopped zucchini
  • 3 cups spinach
  • 1/2 cup bell pepper chopped
  • 1 tablespoon Italian seasoning
  • 1 15 ounce can diced tomatoes, undrained
  • 1 6 ounce can tomato paste
  • 1 32 ounce container beef broth
  • 4 ounces softened cream cheese room temp
  • 1/4 cup heavy cream

Instructions

  • Turn the Instant Pot on sauté mode, spray the bottom of the pan and cook the meat and drain off any grease.

  • Turn the Instant Pot off and add the mushrooms, garlic, zucchini, spinach, bell pepper, spices, tomatoes, tomato paste and beef broth.

  • Stir and cook for 1 minute on the residual heat.

  • Put the lid on, turn the valve to sealing, and select Manual or Pressure Cook for 15 minutes. It will take about 15 minutes to come to pressure and begin counting down.

  • Once the cook time is over, let the pressure manually release for 5-10 minutes, then manually release the remaining pressure.

  • Stir in cream cheese and heavy cream.

  • Serve with shredded mozzarella or parmesan.

Notes

You may think there is not enough liquid before you set the pressure cook cycle. This recipe is loaded with vegetable and they reduce greatly during the cooking process, trust me this makes a perfect hearty soup!
