Keira loves having sleepovers lately. I don’t mind having her friends at our house as long as I have nothing big happening that weekend. Whenever she has friends stay the night I feel the need to make them something fun for breakfast. I’m not a huge breakfast person. In fact I don’t usually like to eat anything before noon, but my girl loves her breakfast food. This easy Cinnamon Sticks recipe made her and her friends happy.

A recipe adaption

When I decided to make my Cinnamon Sticks recipe, I figured I could adapt my homemade pizza recipe (coming soon). The week before I made these, we had ordered out for pizza and purchased some cinnamon sticks with it. I realized it was basically the same bread and thought it might be easier to make this than make my Homemade Cinnamon Rolls {HERE} which just take some extra time due to rising.When you have a few hungry girls in your kitchen, they don’t really want to wait on the linger rise time.

Making the dough

In this recipe I used pizza flour because I was adapting the recipe. Specifically I used 00 pizza flour by King Arthur and I recommend that. However, if you cannot find that you can try bread flour. I do not recommend using all-purpose flour.

There is a rise time for my Cinnamon Sticks but it is just 30 minutes. You can go up to 1 hour if you like.

When combining the ingredients I find it easiest to use use a large bowl and wooden spoon. You don’t need to pull out the mixer specifically here. It really all comes together so easily with a spoon and your hands.

To make you, you combine the water, sugar and yeast. Leave it to sit for about five minutes until the mix starts to look a little fizzy. The yeast is eating the sugar.

In a separate bowl, sift or whisk together the flour and salt. When time is up on the yeast, combine the flour into the yeast bowl and then mix with the spoon. Drizzle in the extra virgin olive oil and mix with your hand. The dough will look shaggy but will start to come together when you mix and knead with a hand. Form it into a rough ball.

Cover with a clean kitchen towel and set the bowl in a warm place out of the sun for 30 minutes.

Rolling the dough

When the rise time is done, roll the dough out onto a lightly floured piece of parchment paper. The dough will be sticky. Add some flour to your hands and knead if it is still looking shaggy.

Once the dough is a smoother ball, roll the dough with a rolling pin starting from the middle. Lightly flour the rolling pin if it is sticking. Roll from the center out to make a circle or a rectangle. Mine is sort of oblong and that is okay too. You just need to make sure whatever the shape it can fit on the pizza stone or baking sheet.

When the Cinnamon Sticks are rolled out, brush on the melted butter and then sprinkle with the cinnamon and sugar.

To make the glaze you will need cream cheese. Ideally, you want to take this out of the refrigerator a few hours before needing to use it. Once it is softened, it is simple to use a handheld blender and mix together all the ingredients. I will give the Cinnamon Sticks about 5 minutes to cool once they come out of the oven and then top them with the glaze. I used the whole amount of glaze in the photos here but Kevin said he would rather have half the glaze on the sticks themselves and use the other half for dunking.

Tips for making my easy Cinnamon Sticks recipe

  • I did make these on my pizza stone. {HERE} However, if you do not have a pizza stone you can also use an upside down cookie sheet. Because we really love to make these and pizza, I’ve been looking at this set {HERE} that includes a rectangle stone and a wooden pizza paddle. plus a cutter. If I were going to buy something new right now, that is what I would buy.
  • No matter whether you are using the pizza stone or cookie sheet, please make sure to use the parchment paper. This will keep your stone from becoming dirt and it will keep your Cinnamon Sticks or pizza from sticking.
  • Make sure to keep in mind that I use 00 pizza flour. If you use something else your results may vary. More on this in the Making the Dough section above.
  • You can leave the Cinnamon Sticks out on the counter the day you make them. They should stay nice and fluffy while the glaze will firm a little. If you have some left after that and want to safe them, put them on a plate and cover them in the refrigerator. I would only save them for a day or so since they are baked goods.
  • To reheat them, add them to the microwave for 10 – 20 seconds.

For the dough

  • 1 1/2 cups warm water about 100 degrees if you want to measure
  • 2 tsp sugar
  • 2 1/4 tsp active dry yeast 1 packet
  • 3 1/2 cups flour
  • 2 tsp fine salt
  • 1 tbsp extra virgin olive oil

Topping the dough prior to baking

  • 2 tbsp butter, melted
  • 2 tbsp sugar
  • 1 tbsp cinnamon

Cream Cheese Glaze Ingredients

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter (microwaved for 20/30 seconds)
  • 1 cup powdered sugar
  • 2 tsp vanilla extract
  • Additional sprinkle of cinnamon for topping off the glaze.

  • When the Cinnamon Sticks are done, let them cool for 5 minutes and then top with the cream cheese frosting. You can use it all or you can use half and reserve the other half for dunking. Dust with another sprinkle of cinnamon.

  • Cut and serve warm.
