This smoked mushroom recipe is going to be your new favorite way to cook mushrooms at home.

It is the perfect appetizer or tasty side dish with earthy flavor, melted butter, minced garlic, and fresh herbs.

Smoked mushrooms only requires a few simple steps and it’s the best way to add a lot of flavor to plain old mushrooms.

Mushroom Health Benefits

We’re huge fans of mushrooms. Not only are they very sustainable, they carry some great health benefits as well.

Mushrooms are loaded with lean protein, fiber and antioxidants.

Also, mushrooms are a lower calorie option to swap traditional meat. In fact, when we swapped out pork belly for oyster mushrooms in our Blue Oyster Mushroom Bao Recipe, it was even tastier than the pork belly version – we swear!

Mushroom Varieties to Smoke

There are so many different types of mushrooms, and you can use your preferred variety for this recipe.

Pick from the traditional button mushroom, portobello mushrooms, oyster mushrooms, cremini mushrooms, or even use a mushroom mixture.

You can even choose to use whole mushrooms or sliced mushrooms for this smoked mushrooms recipe.

We used sliced mushrooms for this recipe since it was a burger topper, which made it easier to fit on the burger patty.

But we can guarantee that using whole mushrooms (you just might have to add more cooking time for larger pieces of mushroom) would be a terrific appetizer.

You can also use whole smoked mushrooms as a side dish for beefy entrees like our Sous Vide Beef Wellington Recipe, Smoked Prime Rib Roast, or even our Chateaubriand Recipe.

Type of Smoker to Use

This smoked mushroom recipe is so easy and super versatile.

Whether you’re using a Traeger-style pellet smoker, a Kamado-style Big Green Egg, or a traditional smoker, this recipe will turn out great.

If you only have a charcoal grill, you could even add in wood chunks to add smoke in your grill as well.

Also, feel free to use whichever wood chips and wood pellets you have in the pellet grill hopper.

We used hickory wood chunks in our Big Green Egg and it developed the best flavor.

How to Make Smoked Mushrooms

Start by preheating your smoker to a low temperature while you prepare your mushrooms by using a mushroom brush to dust off the mushroom caps.

Trim the stems with a paring knife or with kitchen scissors.

Use a shallow smoker-safe pan for the mushrooms. We love using this cast iron fajita plate because it comes with a wooden base that acts as a trivet once it’s time to serve the mushrooms.

Just add a layer of aluminum foil on top to keep them warm prior to serving.

We also love that it comes with a hot mit for the handle so you don’t risk burning your hands when removing it from the smoker.

If you already have a cast iron pan, you can also buy an inexpensive silicone hot mit for your handles.

Place mushrooms in roughly a single layer in the cast iron skillet (it’s okay if they are touching but make sure your pan has room to stir the mushrooms without spilling them in the grill.

Then, top the mushrooms with pieces of sliced butter.

Once you smoke mushrooms for 20 minutes, open the smoker and mix in your minced garlic, salt, pepper, and herbs with the mushrooms.

Continue to smoke the mushrooms for an additional 15 minutes or until the mushrooms reach your desired consistency.

We like our mushrooms to be a bit al dente, but if you continue to cook them, they will continue to soften in the garlic butter and develop a more intense smoke flavor.

Smoked Mushroom Recipe

Prep Time: 10 Minutes

Cook Time: 35 Minutes

Serves: 4

Ingredients:

  • 8oz. sliced baby portabella mushrooms
  • 4 tablespoons salted butter
  • 4 cloves garlic, minced
  • 2 sprigs of fresh thyme, destemmed
  • Salt and black pepper, to taste

Directions:

  1. Preheat your smoker to 225 degrees F.
  2. Put the sliced baby bella mushrooms in a small cast iron with 4 tablespoons of butter. Then, smoke for 20 minutes.
  3. Next, add 4 cloves of minced garlic, salt, pepper and 2 springs of destemmed thyme. Stir to combine the ingredients with the melted butter and mushrooms in the skillet.
  4. Smoke for another 15 minutes in the garlic butter or until the mushroom’s texture reaches your desired consistency.
